"The Chimay Red Cap, or 'Première', in 750 ml bottles, is the oldest of the Chimays. This Trappist beer possesses a beautiful coppery colour that makes it particularly attractive. Topped with a creamy head, it gives off a slight fruity apricot smell from the fermentation. The aroma felt in the mouth is a balance confirming the fruit nuances revealed to the sense of smell. This traditional Belgian beer is best savoured at cellar temperature (50 - 54 °F)." —brewer

"Appearance: Brown with a burgundy red hue with an infinite creamy white head from a tight tiny bubbled carbonation.
"Smell: Raw sweetness, peppery spiciness and light phenols.
"Taste: Soft powdery mouth feel with a crisp carbonation and medium body. Smooth. Very evident clove flavour up front and stays around throughout the beer. Hints of birch and ginger beer-like flavours, peppery medicinal phenols and light herbal tea hop flavour. Quite malty but it stays in the back. Fruitiness is likened to a delicate date sweetness and ripe plum. As the beer warms, there's also a suggestion of chocolate/carob. Finish dries a little though still a bit of residual sweetness leftover, herbal flavours also.
